Heirloom Tomato Galette

ingredients
- 1 Package TENDERFLAKE Puff Pastry, defrosted overnight in refrigerator
- 1 Tablespoon (15 mL) Fresh Oregano
- ¾ Cup (177 mL) Goat Cheese - Crumbled 6 Heirloom Tomatoes - Thinly Sliced
- 6 Thyme Stems
- 1 12-OZ (375 mL) Jar of Sundried Tomatoes
- 1 Fresh Chile Pepper
- 3 Cloves of Garlic - Minced
- 1 Teaspoon (5 mL)Sugar
- Salt and Pepper, to taste

- PREHEAT oven to 400°F (205°C)
- Line Baking Sheet w/ Parchment Paper and roll out TENDERFLAKE Puff Pastry
- Process the Sundried Tomatoes, Red Chile Peppers, Sugar, Salt and Pepper together in a Food Processor until a paste forms
- Add in Oil from Jar of Sundried Tomatoes, if needed
- Spread paste over the TENDERFLAKE Puff Pastry, leaving a 2 inch (5 cm) Border around the edge
- Sprinkle the Oregano and Crumble the Goat Cheese over top
- Arrange Sliced Tomatoes over top and Sprinkle with Thyme Stalks
- Bake in Hot Oven until Pastry is Golden and Cooked Through and Browned on Bottom
